2. Fat Soluble Vitamins
Include vitamins A,D,E and K and can occur in foods
containing fats and stored in the body.
Absorbed and transported around the body in same
way as other fats.
Vitamin A comes from animal sources
such as egg, meat and dairy products.
Beta-carotene, a precursor of vitamin A,
comes from green leafy vegetables and
intensely colored fruits and vegetables.
The body itself makes vitamin D when it is
exposed to the sun.
Cheese, butter, margarine, fortified milk,
fish, and fortified cereals are food sources
of vitamin D.
Vitamin E is found in corn, nuts, olives, green
leafy vegetables, vegetables oils and wheat
germs, but food alone cannot provide a

beneficial amount of vitamin E, and
supplements may be helpful.
Food sources of vitamin K include cabbage,
cauliflower, spinach and other green, leafy
vegetables, as well as cereals.
