2. Mold
Molds can grow anywhere. Molds can survive in
wet, dry, acidic, non acidic, low or high sugar and
salt content. Fungi can live in temperature
between 25°C to 30°C. However, some mold can
survive in high temperature. Example Aspergillus.
Most spore can be destroy at 60°C in 10 minutes.
Low temperature (frozen) can not destroy spore
but only prevent or retard the growth. Molds that
usually found in food are Aspergillus, Penicillium,
Mucor and Rhizopus.
Molds play a role in helping food
industry and medication. In
medication, molds are the source of
antibiotic such as penicillin and for
food industry, molds help in cheese
production
