Cross contamination

i .Direct cross contamination involved the transfer
of a harmful agent from raw foods to cooked or
ready-to-eat foods
Example : blood from thawing ground beef
dripping onto fresh produce stored on shelf below
i. Indirect cross contamination involved the transfer of
a harmful agent to food by hands, utensils or
equipment
Example : raw chicken prepared with knife and
cutting board that are not cleaned and sanitized
after use
